In real life
In 1997 the design at Deutsche Bahn was changed. Long-distance services now all use the livery of ICEs, white with a red stripe, with a red engine. While the Intercity trains were the premium service when the ICE trains introduced, the roles have reversed latest by the late 1990s. Features such as dining cars have also been discontinued in most cases, reducing the travel experience somewhat.

The livery is also available in DBSetXl, dining cars are also available. There is no need to refit anything as there is only the Intercity remaining as long-distance service. The dining cars have custom characteristics, see this table.
There are still a few non-electrified tracks on which Intercity trains are run, especially north of Hamburg towards the island of Sylt or to Denmark. There, class 218 are used, often as a double header. It is not really clear why the dining car is missing here, with all the other engines it is added automatically as can be seen in the other screenshots.
The class 101 is the obvious choice for Intercity trains. It was introduced in the mid 1990s exactly for this kind of service, replacing the older class 103, after the class 120 turned out not to be universally usable type it was supposed to become.
The class 112 can haul Intercity trains, but that was rarely the case. The faster class 101 took over almost all Intercity services in the late 1990s, meaning the class 112 was a good candidate for Interregio services. As these were discontinued, all class 112 engines were demoted into regional services by 2004. One can use the class here, but it is not really realistic.
The class 120 was often seen with Intercity trains until the 2010s, before being phased out slowly. The last engines were retired in 2020.
Class 181 engines were in use with cross-border long-distance services until the mid 2010s, which can be modeled in the game as well. As this specific field of operations with the different electric systems is not modeled in the game, there is no real reason to use this engine and not simply choose the class 101.
Class 182 engines are not in use for express trains with the German railways. However, it hauls practically every long-distance train in Austria, also coming to Germany in cross-border services in the process. So using this type for Intercity trains is not too far away from reality.
